Avocado + Cauliflower = Delicious Vegan Ceviche
Today, we come back with a new avocado recipe recommended by the American Heart Association. The vegan avocado ceviche can be served as an appetizer or side dish even for your Christmas dinner. In the first article we presented the general benefits of the avocado fruit, but what about cauliflower?
Cauliflower is a vegetable that belongs to the Brassica family which also includes broccoli, Brussels sprouts, cabbage, collard greens, and kale. It contains a high amount of vitamin C, vitamin K, vitamin B6, folic acid, Calcium, and antioxidants. The cauliflower has many benefits for our cardiovascular system, reducing the chances to develop heart diseases, if it's consumed regularly.
The vegan avocado ceviche it's a quick and easy recipe for a plant-based ceviche that is full of zesty flavors and it only takes 15 minutes to prepare.
Ingredients for 4 servings

1 ripe fresh and large Hass avocado, peeled, pitted and diced;

1 cup diced cauliflower;

2 tomatoes, diced;

1/3 cup red onion, finely diced;

1 tablespoon minced jalapeno pepper;

1 clove garlic, minced;
-
1 tablespoon chopped fresh cilantro;

1 tablespoon lime juice;
-
1/4 teaspoon salt;
-
1 tablespoon olive oil.
Instructions: In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeno, garlic, cilantro, lime juice, salt and olive oil. Transfer to a serving bowl. You can serve it with homemade pita chips.
